Ingredients:
Filling:
1 Cup rice (uncooked)
1 lb. lean ground beef (or lamb or turkey)
1/3 Cup water
2 t. Allspice
Salt to taste
50-60 grape leaves (check Int'l Foods section or local Greek food shops)
Cooking liquid:
1 C lemon juice (more or less to taste)
2 C water (salted @1 T or less to taste)
8 cloves garlic, peeled
Directions:
1. Mix rice, ground beef, water, Allspice, and salt thoughly
2. Remove grape leaves from jar and cut out tough stems, rinse all leaves well.
3. Spread out each leaf individually
4. Spoon about teaspoon of filling and place in clean grape leave
5. Roll grape leave in a cigar-like fashion, tucking (tightly) the sides
6. When all leaves are stuffed and done, stack them carefully in a two quart saucepan and sprinkle with the garlic; add lemon juice and water mixture.
7. Place a plate over the stacked rolled grape leaves (prevent leaves from unwrapping while cooking)
8 Cover pot. Cook on high until brought to boil
9. Reduce heat, continue cooking for about 45 minutes, until leaves are tender and rice is cooked.
10. Let stand for @10 minutes before serving.
11. Serve: place excess 'juice' in a bowl, some like ketchup as a condiment
