IMPORTANT - Pizza Can Be Reheated !!

We have all attempted to reheat store bought or home made pizza more than once. We all have tried micro-waving a a slice or two, only to be left with a limp, rubbery piece of pie. I have used for years a simple technique of taking a Teflon coated pan, spray some Pam or vegetable oil surface, placing the slice of pizza crust down first and heating it on med to high heat for about two minutes, then carefully flipping the slice over and heating the cheese side of the slice for about two minutes and you are done. The slice is warmed well, and the crust is 'reasonably' editable. Now the Chicago Pizza Club offers a better solution (soon to be tested by me). Heat a toaster oven to about 400 degrees F, place a piece of parchment paper in a baking sheet and place your slice of pizza on the parchment and heat. The Chicago Pizza Club has found this appears to be the best option (besides using parchment paper and a pizza stone and reheating) to achieve a crisp re-heated pizza slice. Why? It appears the parchment paper absorbs moisture in the dough leaving a crisper crust. Maybe try the same approach in the microwave oven. Read more > The Chicago Pizza Club
